Ingredients

3 Dozen Med to Large Raw Shrimp

4 Cloves Fresh Garlic

1 Bunch Fresh Cilantro

1 Can Chipotle Peppers in Adobe Sauce

24 Ounces of ‘plain’ margarita mix (don’t use flavored such as strawberry or those with alcohol already in the mix)

Wood or Metal Skewers

Preparation

In a blender or food processor, combine garlic, cilantro, chipotle’s and 6 oz of maragita; blend until garlic, chiles and cilantro are at least coursely chopped. Add remaining margarita mix. Reserve 6 oz of the mixture for basting and pour the remaining mixture over shrimp; marinate refrigerated for no longer than 30 minutes. (acids will cook shrimp if left in marinade longer); remove shrimp from marinade and place on skewers; grill for two to three minutes on each side, basting frequently with reserved marinade.
