Ingredients

7 oz chicken breasts, cut in 1/2 in cubes

2 tablespoons olive oil

1 medium onion, chopped

5 oz medium-grain brown rice, rinsed twice

10 oz tomato purée

1/2 tablespoon salt

Black pepper

Preparation

  1. Sauté the onion with oil in skillet over medium heat for 6 minutes.
  2. Add cubes of chicken and increase heat to medium high until browned lightly for about 7 minutes.
  3. Add rice to skillet, stir, then add tomato purée. Add salt and simmer gently for 30 minutes stirring often and adding water if necessary.
  4. Add pepper to taste.
