Ingredients
3 chicken breasts
1 cup frozen or fresh corn
1 poblano chile diced
1/2 cup Mexican blend grated cheese
1/2 cup sour cream
1/2 cup Las Palmas Enchilada Sauce
1/2 cup chopped cilantro
1/2 cup chopped green onions
Mix all above in large bowl
1 pkg Trader Joe’s Organic Whole Wheat Tortillas
1 pkg Trader Joe’s Corn and Wheat Tortillas
Trader Joe’s Mexican Blend Grated Cheese
Las Palmas Enchilada Sauce
I did a combination of listed tortillas.
Preparation
Heat some enchilada sauce in sauté pan. Dip tortilla in warmed sauce. Place about 1/2 cup chicken mixture in tortilla and top with a desired amount of cheese. Roll and repeat. Top with enchilada sauce and a little more cheese. Garnish with some cilantro and green onions.
Bake until cheese is melted and sauce is bubbly. These freeze well.
