Marika’s Vegetable Stew

11/2 lb. tomatoes (or fire roasted tomatoes)

2 onions slivered

1 large eggplant cubed (bake it first) -

Handful mushrooms halved

2 zucchini cubed

2 carrots thinly sliced

Can of chickpeas - rinsed well and drained

1 t. cinnamon

¼ t ginger (fresh and slivered)

11/2 t. kosher salt

1 T cumin

Pinch coriander

Pinch of cardamom

¾ cup currants

(cashews)

Preparation

Sauté onions - put in all seasonings - all veggies - throw in chickpeas -
