Golden Beets

Belgian Endive

Walnuts

and your favorite French Dressing

Preparation

Cut off the greens and tips of the beets and boil until tender. When cool they will peel easily and you can Julianne them. Trim of the root tip of the endive and slice into rings. Roughly chop the walnuts. Combine the 3 ingredients in a salad bowl, sprinkle with fresh ground black pepper and toss with the French dressing. Chill at least an hour to let the flavors blend.
