Ingredients
*1/2 cup soy flour
*1/2 cup millet flour
*1/3 cup plus 2 teaspoons organic cocoa powder
*1/4 teaspoon salt
*1/2 teaspoon baking soda
*1 teaspoon baking powder
*1/4 cup semisweet chocolate chips
*1/4 cup olive oil
*1/4 cup pure maple syrup
*1 small babyfood jar of organic applesauce - 4.5 fluid ounces
*1 cup brown sugar
*1 teaspoon pure vanilla extract
*2 eggs
(To further reduce fat content, you can use 1 egg plus 1 egg white)
Preparation
Preheat oven to 350 degrees. Oil an 8x10 pyrex baking dish.
In a mixing bowl, sift together dry ingredients.
In a saucepan, melt the chocolate chips in the olive oil over low heat, gently stirring until all the chocolate has melted. Add the melted chocolate mixture to the dry ingredients.
Add all remaining ingredients to the mixing bowl, and stir/beat/mix until creamy and uniform. Pour into prepared pan.
Bake for 35-40 minutes until a toothpick inserted into the center comes out clean.
