Ingredients

2 to 3 cups purchased or home made croutons

6 medium tomatoes (any variety or mixed variety) cut in large chunks.

1/2 red onion chopped

1/2 cup chopped cucumber

4 tablespoons fresh basil finely chopped

1/4 cup balsamic vinegar

1/2 cup extra virgin olive oil

1/3 cup crumbled fetta cheese

Preparation

Mix all ingredience (except croutons) together and refrigerate up to 3 hours. Add croutons just before serving.
