Ingredients
Red wine marinade useful for all meats:
1/2 cup dry red wine
2 tsp dijon
1 crushed clove of garlic
1/2 tsp chopped fresh thyme
Yogurt marinade (chicken and lamb):
1/2 cup Greek yogurt
1 crushed clove of garlic
1 small fresh red chili seeded and chopped
1/2 tsp sweet paprika
2 tsp chopped fresh mint
Honey soy marinade (pork, beef and chicken):
1 TBS warm honey
1/3 cup soy sauce
1 tsp sesame oil
2 tsp freshly grated ginger
2 cloves crushed garlic
Balsamic vinegar marinade (chicken and lamb):
1/4 cup lemon juice
2 TBS olive oil
1/4 cup balsamic vinegar
2 cloves crushed garlic
3 tsp brown sugar
2 tsp chopped fresh thyme
Spicy rub (fish, chicken, beef or lamb):
2 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric
1 tsp sweet paprika
1 tsp garlic salt
1/4 tsp chili powder
Preparation
Marinade for 1 night. The rub can be stored in an airtight container for several months.
