Ingredients
1/4 cup olive oil
2 cloves minced garlic
2 T fresh basil or 1/2 tsp dried basil
2 T fresh parsley or 1/2 tsp dried parsley
2 16 ounce cans diced tomatoes
1/4 tsp salt
1/4 tsp pepper
Can add any desired sauteed veggies… mushroom is my fav!
Preparation
In a 3 quart saucepan, heat olive oil and saute garlic until golden brown. Stir in basil, parsley and tomatoes. Add salt and pepper and simmer for 20 minutes. Add any desired sauteed veggies and serve over pasta.
