Ingredients

1 T. olive oil

1 small shallot

2 cloves garlic, chopped

1/4 c. fresh basil (1 t. dried)

5 seeded Roma tomatoes

2 T. tomato paste

Herbes de provence to taste

Salt and pepper to taste

Preparation

  1. In skillet, heat olive oil. Saute shallot and garlic until golden.
  2. Place shallot and garlic with all other ingredients in food processor, and blend until smooth.
  3. Pour back into skillet, and simmer sauce for 15 minutes.
