Ingredients
1/2 cup balsamic vinegar
1/2 cup champagne vinegar
1/2 cup lemon juice, fresh
1 1/2 cup olive oil
1/4 tsp sugar
2 tbsp thyme, fresh chopped
1 tbsp oregano
1/2 tsp red pepper flakes
salt and ground pepper to taste
1 red onion, medium chopped
8 large garlic cloves, sliced thin
6-8 artichokes
1/3 cup parmeasan cheese
Preparation
- Mix all ingredients except artichokes
- Peel stems and trim leaves of artichokes. Steam or boil 25 minutes.
- Cut artichokes in half starting at the bottom. Cut out choke.
- Layer artichokes in large bowl cut side up.Top with marinade and refrigerate up to 24 hours.
- Drain artichokes, reserving marinade.
- Grill over hot grill until just charred, about 15 minutes.
- Top with a little marinade and lots of fresh parmeasan. Serve.
