Ingredients
1/2 cup Olive Oil
1/2 cup white vinegar
1-4oz jar diced pimentos
3tbs chopped fresh parsley
3 tbs minced green onion
3 garlic cloves minced
1 tsp sugar
3/4 tsp basil
1/2 tsp each of salt and pepper
1-8oz block sharp cheddar cheese
1-8ox cream cheese, chilled in freezer

Preparation
Combine first 10 ingredients and mix throughly.
Cut cheese length wise, then crosswise in 1/4 inch slices.
In a shallow dish that can be covered, alternate cheese slices and pour marinade over cheese and chill 8 hours, basting the cheese occasionally.
To serve, carefully remove cheese with a spatula on the serving dish and pour marinade on top.
Serve with crackers.
