Ingredients
2 whole chicken breasts, flattened
3/4 tsp salt
1/4 tsp pepper
4 tsp cornstarch
4 tsp olive oil
1 egg white, lightly beaten
Preparation
Flatten chicken breasts between two sheets of waxed paper until 2 1/2 - 2 3/4 in. Salt and pepper each breast. Let STAND 20 min. Sprinkle breasts with cornstarch and olive oil, let STAND 20 min. Add egg white and mix to cover breasts. Let STAND 20 min. Saute 2 to 3 min per side. Cover with a tarragon cream sauce or other. Serve with broccoli.
