Ingredients
1# (about 32) large shrimp, peeled, tails left intact and cooked
2 oranges, peeled and cut into segments
1-5 1/2 oz. can pineapple chunks in juice, drained, with 1/4 c. juice reserved
2 green onions, sliced
1/2 c. orange juice
2 T. minced fresh cilantro
2 T. lime juice
2 T. white wine vinegar
1 T. olive oil
1 minced garlic clove
1/2 t. basil
1/2 t. tarragon
Preparation
Combine shrimp, orange segments, pineapple chunks, and green onion in resealable plastic bag. Mix remaining ingredients in medium bowl; pour over shrimp, turning to coat. Marinate in refrigerator 2-8 hours.
