medium cucumbers, peeled, sliced

small onion, thinly sliced

tablespoons white balsamic vinegar or rice vinegar

tablespoons water

teaspoon salt

teaspoon pepper

1/4

cup sour cream

tablespoons chopped fresh dill

Preparation

In medium bowl, combine cucumbers, onion, vinegar, water, salt and pepper; mix well. Cover; refrigerate 30 minutes to 2 hours.

To serve, drain cucumber mixture. Add sour cream and dill; mix well.
