Ingredients

1/2 C. olive oil

1 T. fresh rosemary

2 cloves garlic, chopped

1/2 t. dried thyme

1/2 t. ground coriander

1 t. fennel seed

1/2 t. coarse ground black pepper

1 small bay leaf

1 log goat cheese, sliced

Preparation

Arrange goat cheese on a small serving platter or bowl. Heat oil and herbs just to a simmer. Pour over goat cheese. Let sit for 1/2 hour or more.
