Ingredients

2 cups sliced roasted peppers 

1 tablespoon finely grated lemon zest 

1/4 cup fresh lemon juice (from 2 lemons) 

6 tablespoons extra-virgin olive oil 

1/4 cup toasted sesame seeds 

Kosher salt and freshly ground pepper 

1/2 cup chopped fresh mint leaves 

Preparation

Toss peppers with lemon zest and juice, olive oil, and sesameseeds. Season with salt and pepper. Let stand at least 30 minutes, then toss with mint leaves before serving.
