Ingredients
3 c. (l lb.) peeled, cooked devined shrimp coarsley chopped (set aside some whole for garnish)
l small onion (minced)
1/2 c. olive oil
juice of 3 limes
salt and ground pepper
3 c. cooked rice
3 T. finely chopped cilantro
2 large avocados, peeled seeded and diced
1/2 c. chopped, pitted green olives
3 jalapeno peppers, chopped fine
Preparation
Cook rice. Combine shrimp and onion in a large bowl. Whisk oil, lime juice, salt and pepper. Marinade shrimp and oniion 2 hours. Add remaining ingredients, toss. Garnish with whole shrimp and cilantro leaves.
