Tomatoes

Salt

Sugar

Tarragon vinegar

Olive oil

Preparation

Wash and slice a tomato on a plate large enough for each slice to be seperate. Salt each slice lightly, and wait a minute till the tomato slices start to “sweat”. Sprinkle a bit of sugar on each slice. Wait a minute for the sugar to disolve. Sprinkle each slice with Tarragon vinegar, and then pour about a teaspoon of good olice oil over each slice. After about 5 minutes turn the slices over so that they appear to be evenly covered in the marinade and serve. The tougher the tomatoe the longer it should sit after each step. Can be made ahead and left at room temperature for hours (cover with a food wrap if you are not serving right away).
