Ingredients
16 oz pkg broccoli & cauliflower florets
16 oz cherry tomatoes
15 oz can chickpeas, rinsed & drained
1 cup slivered snow peas
3 green onions, chopped
1 thinly cut carrot
1 red pepper, chopped
1/2 cup olive oil
1/3 cup red wine vinegar
2 garlic cloves, chopped
1/2 tsp salt
1/2 tsp sugar
1/2 tsp basil
1/4 tsp pepper
Preparation
Combine florets through red pepper in a large bowl. Process oil and remaining ingredients in a blender till smooth. Add to veggies, tossing to coat. Cover and chill 5 hours.
