Ingredients

8 tomatoes, washed and cut into 1/8" pieces

12 mushrooms, sliced

1 can artichoke hearts, drained and quartered

dressing:

1/4 cup EVOO

1/2 cup wine vinegar

1/4 cup water

1/2 tsp dry mustard

salt, and oregano to taste

Preparation

combine vegetables and set aside combine dressing and pour over vegetables and marinate several hours or overnight.
