Ingredients
1 lb. orzo
1/2 red pepper, finely minced
1/2 green pepper, finely minced
1/2 red onion, finely minced
3/4 cup coarsely chopped black olives
1/2 lb. feta cheese, crumbled into large chunks
Gazebo Greek Marinade and Dressing
Preparation
Cook orzo for approximately nine minutes in boiling water. Drain and rinse with cold water to stop cooking process. Add next four ingredients then add enough dressing to lightly dress or to taste. Start with a little and then add more as needed. Gently fold in feta cheese. Best if made one day ahead. Bon Appetit
