Ingredients
1 cups of cooked cubed potato
1 cups of cubed tomato
1/2 cup of cooked greenbeans
1/2 red onion cut in half and sliced
2 tablespoons red wine vinegar
4 tablespoons olive oil
2 cloves garlic diced
1/2 teaspoon oregano
1/2 teaspoon rosemary
salt and pepper to taste
Preparation
combine first 4 ingredients in a bowl.
In a smaller seperate bowl mix the last 6 ingredients. Pour mixture over the vegetables and toss. Refrigerate for at least one hour.
