Ingredients

12 hard boiled eggs

3 very large onions

2 garlic cloves

1/3 cup vegetable oil

1-1 1/2 lbs. chicken liver

2 1/4 teaspoons Kosher salt

1 teaspoon black pepper

Preparation

Heat oil in skillet–add chopped onions and garlic and saute until golden brown, stirring occasionally.

Rinse livers and pat dry carefully, removing any gristle. Saute livers in with the onions, cooking over moderately high heat until cooked through and browned–aout 10 - 12 minutes. Let mixture cool for about 20 minutes. Using a food grinder, alternately add onion-liver mixture and hard boiled eggs. Once all is ground, mix in salt and pepper. Correct seasoning to taste. Chill for at least 2 hours.
