Ingredients

quick marinade:

1/3 cup olive oil

a few sprigs of fresh rosemary rough chopped or a couple teaspoons of dried rosemary

a couple sprigs of fresh mint, roughly chopped (dried will NOT do)

2 medium sized cloves of garlic crushed or minced (fresh NOT the stuff in a jar)

juice of one lemon

1/3 cup of red wine

1/4 cup of coffee grounds

salt (I like those artisan sea salts available at your gourmet shops or cooking oriented retail stores)

fresh ground pepper to taste

4 small delmonico steaks, 2 medium strip steaks or 4 lamb chops - whatever your meat preference

Preparation

about an hour to hour and a half before grilling, throw your marinade together - mix all ingredients EXCEPT salt & pepper & garlic & coffee grounds.

Whisk together briskly in a mixing bowl and transfer to a shallow rectangular baking pan (like you would use for brownies, etc)

rub your meat on BOTH sides with salt, pepper & garlic & coffee ground & place in marinade. cover with saran wrap & refrigerate. Marinade for about an hour, turning meat once. (the longer you marinate, however, the stronger the flavors- you can marinade and refrigerate the day before)

rev up your grill when it’s dinner time, grill to your meat doneness preference (I like medium rare personally, which is about 5 - 7 minutes a side on my little mini weber kettle charcoal grill)- you can use the marinade liquid to baste while cooking, but discard any leftovers - you can’t reuse marinades.

serve with oven roasted fingerling or baby red bliss potatoes & a nice salad & you have a simple, easy, restaurant worthy meal!
