Ingredients
1 cup yellow cornmeal
1/2 cup flour
1/2 t baking soda
1 t salt
1/2 t sugar
1 cup cream style corn
1 medium chopped onion
1/4 pound grated cheddar cheese
1/2 cup canola oil
2 eggs, slightly beaten
1 cup buttermilk (or add 1T vinegar or lemon juice)
can chopped green chilies or minced jalapeno peppers.
Preparation
combine dry ingredients; stir in corn, onions, cheese. Bake 20-25 minutes at 450 in greased, preheated cast iron skillet.
