Ingredients

Mascarpone Cookie;

1/2 cup mascarpone cheese, 2 boxes of vanilla wafers(crushed), 1/2 cup Orange juice, 12 egg whites, vanilla extract, almond extract, 2 tablespoons brown sugar

Vanilla Creme Fraise; 2 cups heavy cream, 3/8 cup creme fraise, 2 teaspoons vanilla extract, 1 teaspoon almond extract, 2 tablespoons granulated sugar

Hibiscus Sauce; 1/2 gal. boiling water, 2.5 oz. dried hibiscus flowers, 1 1/2 cups granulated sugar, equal parts cornstarch and water mixture to thicken to desired consitency

Optional: Garnish;per dish,2 fresh raspberries, 1 mint leaf, and sprinkle raw cane sugar

Preparation

Cookies: combine ingredients and roll out mixture onto a baking tray lined with wax paper. Bake at 300 for 20-25 minutes till tops darken. Chill immediately. The ending result should resemble a strata of sorts. dish up as 2 thin rectangular cookies per serving Creme Fraise: Mix all ingredients at a med. speed until med. peaks form. serve a large teaspoon with each Sauce: Boil water, add sugar and flowers, let steep for an hour, filter out the leaves and reheat to thicken with cornstarch.cool. drizzle 1.5 oz. over each dish
