Ingredients

1 1/2 pounds sweet potatoes, peeled and cut into 1 ich chucks

2 tablespoons butter

2 tablespoons orange juice

1/2 teaspoon salt

1/8 teaspoon black pepper

Preparation

1 Combine potatoes in a pot with enough cold water to cover by 3 inches. Bring to a boil and cook until very tender 10 to 12 minutes. 2 Drain and transfer potatoes to the food processor or blender, add butter, orangew juice, salt and pepper and process until smooth.
