Ingredients

3 cups flour: white, or use maybe 1/3 semolina. or whatever, experiment.

1/4 teaspoon yeast (heaping)

1/2 teaspoon salt

1.5 cups water, maybe slightly more. don’t make it too wet

potential additions: olive oil, olives, rosemary, sesame seeds on top

Preparation

  1. Mix up dry stuff
  2. Add water til it’s goopy but not crazy swampy
  3. cover it with plastic
  4. put it somewhere warm for 12-14 hours
  5. heat stove to 500
  6. put dutch oven thingey in stove to heat up
  7. disarm fire alarms
  8. put flour on cutting board
  9. dump out the dough, fold it around maybe 4 times
  10. cut a piece of parchment paper
  11. line a big frying pan with a big hunk of paper that’s got plenty of overlap grabbability cuz it’s going into the heated dutch oven and you need the paper to grab it and transfer it. 11.5. Now would be a good time to slice slits and sprinkle delectables.
  12. cover it up with plastic or a dish towel.
  13. after the oven has heated for maybe 30 minutes or so, transfer dough to hot thing and cover it
  14. bake for 30 minutes
  15. uncover and leave in oven at maybe 400 for another 15-20 minutes
  16. take out let cool eat etc.
