Ingredients
For 1 cup mayo
1 egg yolk
Pinch salt
Pinch dry mustard
12 tablespoons oil
1 tablespoon lemon juice or wine vinegar
1 tablespoon warm water
Preparation
For 1 cup of mayonnaise, whisk together 1 egg yolk, a pinch of salt and a pinch of dry mustard. Whisk in about 3 tablespoons of oil, drop by drop. In a separate small bowl, combine 1 tablespoon lemon juice or wine vinegar and 1 tablespoon warm water; whisk into eht egg yolk mixture.
Once an emulsion has formed, add about 9 more tablespoons of oil in a slow, steady stream, whisking continually. If the sauce is too thick, whisk in some additional lemon juice or warm water. Increase proportions as necessary to make a greater quantity of mayo.
