Ingredients

2 cups flour

1/2 cup powder sugar

1 cup butter

4 beaten eggs

2 cups sugar

1/3 cup lemon juice

1/4 cup flour

1/2 tsp. baking powder

Preparation

Sift together the 2 cups of flour and powdered sugar. Cut in butter until it clings together (TRICK: FREEZE BUTTER THEN GRATE IT INTO THE FLOUR/POWDERED SUGAR MIX-MUCH EASIER TO WORK WITH). Press into 13 x 9 pan. Bake at 350o for 25 minutes or until light brown.

Beat together eggs, granulated sugar, lemon juice, 1/4 cup flour, and baking powder. Pour over baked crust and bake another 25 minutes.

Sprinkle some powdered sugar on top when it’s all done. Cut when cooled.
