Ingredients
For the Sauce
1/4 cup Olive Oil
4 leeks - white part cut length-wise.
1 Red Pepper - cut into cubes
1 Chilli Pepper - Cut into cubes.
1 Onion - cut into cubes.
3 Garlic cloves - crushed
1 tbsp Paprika
1 tbsp Hot Paprika
1 small can Tomato paste
1 - 2 cups water
Juice of 1 lemon, and the peal of half a squeezed lemon.
300 Gr. Frozen small Peas
300 Gr. Frozen French Green Beans
300 Gr. frozen Artichoke Hearts - quartered.
Salt, Pepper
For the Meat Balls
500 Gr. Ground Beef
2 Onion Grated in a food processor
2 Egg Yolks
4 tbsp Bread Crumbs
Parsley, Cilantro - Chopped
Cumin, Salt, Pepper
Preparation
Sauce and Vegetables In a heavy skillet heat up oil then add Leeks, Red Peppers, Chilli and Onion, stir fry until soft (about 10 min). In a small bowl mix Paprika, Hot Paprika and garlic. Add a little olive oil to make paste, Add to the vegetables in the skillet. To the skillet add Peas, Green Beans and Artichoke, add Tomato paste, water, salt pepper, Lemon Juice, stirring all the time, until vegetables are a little soft and the sauce is integrated. For the Meat Balls Place all ingredients in a large bowl and mix well, using clean hands, making sure all is mixed. Form small balls (smaller then ping pong). Place Meat balls in sauce, moving them around carefully as to not break them and making more room, for additional balls to come in. Add peal of half a lemon, try and push some of it in the sauce. Bring to a boil, lower flame, cover the skillet and cook for 30-40 minutes. Best served over rice.
