Ingredients

2 tbsp. Olive Oil

1 lb. Ground Beef

1 lb. Ground Pork

1 lb. Chicken Breast

6 cloves garlic, minced

2c. Water

2 tbsp. Chili Powder

2 tsp. Dried Oregano

2 tsp. Salt

1 tsp. Cayenne Pepper

3 (6oz) cans Tomato Paste

2 tsp. Sugar

2 (14oz) cans Chopped Tomatoes.

3c. Tomatoes, diced

3c. Red Bell Peppers, diced

Dash of dried Cilantro

3c. (15oz. cans)Canned Black beans, drained, rinsed

2-3/4c. Beef Broth

Grated Cheddar Cheese

Preparation

Heat Olive Oil in heavy large pot over medium-high heat. Add ground beef and pork, saute until brown, about 3 minutes. Add chicken & garlic, saute about 5 minutes. Add 2 cups water, bring to boil. Add Chili Powder, Oregano, salt & Cayenne Pepper. Reduce heat, cover & simmer for 10 minutes. Add tomato paste & sugar, simmer for 5 minutes. Add tomatoes, onions, peppers, black beans, Cilantro to chili mixture. Add beef broth until thinned to desired consistency. Simmer for at least 1 hour in a crock pot or on stove top.

Once ready, ladel into soup bowl and sprinkle Cheddar Cheese on top.
