Ingredients

500g lean beef mince

1 litre Beef stock

1 egg

1 cup dried breadcrumbs

1 tablespoon fresh/dried rosemary

2 tablespoons olive oil

1 & 1/2 cups risoni pasta

2 cups diced tomatoes

Preparation

Combine mince with 1/2 cup of stock, egg, breadcrumbs & rosemary. Roll mix into balls Heat oil in a large pan. Add meatballs and cook until browned all over. Pour over remaing stock Cook covered, for 10 min. Add risoni and tomatoes. Cook, stirring occasionally for 8 min. till pasta is al dente.
