Ingredients

1/2 Cup Slivered Almonds

1 Can Chickpeas

2 Eggs

1 tsp Lemon Juice

Salt & Pepper

Herbs to taste (parsley, oregano)

3/4 Cup Shredded Mozzarella

Preparation

Using a food processor, grind the almonds to the texture of fine breadcrumbs. Add the chickpeas, eggs, mozzarella, lemon zest, 1/4 tsp. salt and 1/4 tsp. pepper to the food processor. Form balls from the mixture using a cookie shaper and place on a baking sheet lined with parchment-put this in the freezer for 1 hour. Once balls have frozen individually, remove from sheet and place in a large Ziploc bag-keep this in the freezer until you are need the meatballs. Whenever you want to eat them, bake until golden and firm at 350, 25 to 30 minutes.
