2 lbs. Ground meat (85% lean)
1 large onion
2 eggs
½ C breadcrumbs
¼ C orange juice
Salt, pepper, Worcestershire sauce, or your choice of spices
Ketchup
Chop the onion; sauté till translucent.
Mix together the eggs, meat breadcrumbs, and orange juice.
Add the spices and half the sautéed onions.
Shape the meat into loaves.
Spoon the remaining sautéed onions on top of the meatloaf.
Spoon ketchup on top of the meatloaf.
Put a pan of water on the shelf underneath the meatloaf so the top of the meatloaf doesn’t crack.
Bake at 350 degrees for 1 hour.
Slice after the meatloaf cools slightly.
