Ingredients

Some ground beef (about 1.5 lbs)

One onion, chopped

Two eggs, beaten

Salt

Pepper

1 cup plain bread crumbs

1 16-oz can of tomato sauce

3/4 cup of water

2 tbs white vinegar

2 tbs mustard

2 tbs brown sugar

Preparation

Mix the first six ingredients together with your hands, along with half the tomato sauce. When blended, sort of mound it into a compact, lumpy heap in a deep square casserole dish - I use Corningware. It is more of a meat lump than a true meatloaf.

Mix together the remaining tomato sauce with the water, mustard, vinegar, and sugar. Pour it over the meat lump.

Bake, uncovered, at 350 or 375 until done - probably about 1.5 hours or so.

This, eaten with baked potatoes and green beans, both well-buttered, is God’s own dinner.
