Ingredients

1 Tablespoon Extra Virgin Olive Oil

1/2 pound bulk sweet or hot Italian sausage

2 cloves garlic, finely chopped

1 small yellow onion, chopped

1/2 pound pepperoni, removed from casing and chopped

14 ounces petite diced tomatoes, drained well

3/4 cup shredded mozzarella cheese

1/4 cup grated Parmesan or Romano Cheese

Preparation

Heat a skillet over medium-high heat. Add extra virgin olive oil and brown the sausage. Add garlic and onions and cook until onions are tender. Remover and drain on paper towel. Warm the pepperoni in the same pan then add back the sausage, garlic, and onions. Transfer the meat mixture to the bottom of a casserole dish. Sprinkle the tomatoes over the meat. Top the tomatoes with the cheese. Place under the broiler until the cheese is melted. Serve immediately with crackers or chips for dipping.
