Ingredients

2 teaspoons lemon pepper

1/3 cup all-purpose flour

1 lb boneless skinless chicken breasts(4-4 oz pieces)

-For Salsa-

4 medium scallions, chopped

3 tablespoons fresh lemon juice

1/8 teaspoon curry (just a pinch)

1/4 tsp dried oregano leaves

1/4 tsp thyme leaves

3 tablespoons fat-free Italian salad dressing

1/2 cup avocados, peeled and diced

1/2 can diced, tomatoes, drained & rinsed

1/4 cup sliced black Olives

Preparation

Preheat oven to 400 F degrees. Coat a baking dish with cooking spray. Combine lemon pepper seasoning & flour. Lightly coat chicken with cooking spray, then coat each breast with flour mixture. Place chicken in prepared dish & bake this until cooked through, about 20 mins.

In a bowl, curry powder, herbs, lemon juice, mix scallions, avocado, tomatoes & olives and remaining ingredients.

Place fresh romaine lettuce on tow plates. Divide chicken breasts between four plates & top this with avocado salsa.
