Ingredients
3 bunches of parley, stems removed
1 cucumber
1 red pepper
1 green pepper
4 ribs celery
2 Tbl.dried mint, or fresh if possible
1 medium purple onion
2 medium tomatoes, seeded, or
10 cherry tomatoes
1 can black olives
6 to 8 oz. plain feta cheese, Mediterranean or peppercorn flavored also good
salt and pepper to taste
1/3 cup fresh lemon juice
3/4 cup olive oil
Preparation
Chop by hand or use food processor to chop parsley and mint leaves. Dice all other veggies and olives into small pieces. Add crumbled feta cheese and salt and pepper. Mix together olive oil and lemon juice and pour into bowl with rest of ingredients. Best refrigerated for 2 to 3 hours or overnight before serving.
