Ingredients

1 c. diced english cucumber

1 c. chopped seeded tomato

1/2 c. crumbled feta cheese

2 tablespoons fresh lemon juice

1 tablespoon olive oil

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 8oz package 7 grain pilat

1 7 oz container hummus

3 Mediterranean style white flatbreads

Preparation

  1. Combine first 8 ingredients in a bowl. Spread hummus evenly over each flatbread. Spoon pilaf mixture evenly over half of ea. flatbread and fold flatbread over filling. Cut each sandwich in half and serve immediately
