Ingredients
1lb of penne pasta
8 oz of sundried tomatoes packed in oil chopped
8 oz of pitted kalamata olives chopped
1/4 cup of extra virgin olive oil
1 tsp of oregano
2 cloves of garlic chopped
12 oz of feta cheese crumbled
Preparation
Put 6 quarts of water with salt to boil
Take 1/4 cup of the olive oil and put into a saute pan, add chopped garlic and saute for a few minutes
Add chopped olives and tomatoes to the oil/garlic mix, saute until coated add oregano and let cook on low for about 3-5 minutes.
Add pasta to boiling water and cook until pasta is al dente about 10 minutes. Drain pasta and toss with olive oil/tomato and olive mixture add crumbled feta cheese and serve.
Goes great with tossed salad and fresh Italian or French bread.
