Ingredients

6 slices pita or flat bread

Hummus mixture

1 15 oz can garbonzo/chickpeas, drained and juice reserved

1/8 cup extra virgin olive oil

juice of 1/2 fresh lemon

2 cloves garlic

1/4 tsp kosher salt, or to taste

1 tsp fresh parsley leaves

Toppings

8 oz crumbled feta cheese

1/2 chopped black olives, or jarred olive tapanade

roasted red pepper strips, drained and dried on paper towel

Preparation

in bowl or blender puree chickpeas, olive oil, lemon juice, garlic cloves, salt and parsley leaves, add enough reserved juice to make a spreadable consistancy. Spread onto pita bread and top each with chopped black olives/or tapanade, roased pepper stips and then crumbled feta on top. Bake in 425 degrees oven until hot and cheese has melted. Can be broiled or grilled.
