Ingredients
3/4 cup chopped onion
4 Tbls. Butter (may be part extra virgin olive oil)
2 cups cooked orzo (use package directions)
1 pound can peeled chopped tomatoes (or fresh, 1 lb.)
1 pound fresh raw shrimp, cleaned and deveined
1 ½ cups Feta cheese, crumbled
2 Tbls. fresh dill weed, chopped, or 2 tsps. dried.
Preparation
Saute onion in butter. Spread orzo in individual casseroles or 9 x 13 inch casserole dish. Top with sauteed onions. Add shrimp, feta cheese and dill. No salt. Pour the tomatoes over all, and bake at 350 degrees for about 50 minutes. Six servings.
