Ingredients

2 cups chopped cucumber

2 lg beefsteak tomatoes chopped

3 green onions chopped

2 stalks celery sliced thin

1 cup toasted sliced almonds (toasted in garlic olive oil with 1 Tblsp low salt soy)

3 Tblsp plum vinegar

1 tsp sugar

1/2 cup chopped mozzarella or Feta cheese

2 Tblsp dried spearmint

1/2 cup extra cheese to garnish salad when served

Preparation

Place chopped cucumber, tomato, celery and green onions and mint in bowl. Add almonds. Mix together. Add sugar and mix well. Add plum vinegar and mix well. Add 1!2 cup cheese Cover and refrigerate for 2 to 4 hours, serve cold .
