Ingredients
3/4 Cup Chopped Tomato
1 tbls diced onion
1 tbls chopped fresh cilantro
1 stp lime juice
1 tsp salt
1 garlic clove
1 cup hot cooked jasmine rice
2 tbls chopped fresh or tsp dried basil
1 cup chopped red bell pepper
3/4 cup diced zucchini
3/4 cup diced yellow squash
1/4 cup diced red onion
2 tbls balsamic vinegar
2 tsp olive oil
4 fat-free flour tortillas
1/4 cup crumbled feta cheese
Preparation
Make a salsa and mix tomato, onion, cilantro, salt, garlic, and lime juice.
Broil bell pepper, zucchini, squash, and red onion for 12 minutes or until browned. Then drizzle with vinegar and olive oil and toss.
Combine rice and basil.
Warm tortillas and make wraps with the feta
