Ingredients

From an Asian grocery store

Ponzu sauce (a citrus soy sauce - You can make a simplified Ponzu sauce by mixing 2 parts soy sauce with 1 part lemon juice and 1 part orange juice)

Daikon radish (you can substitute a white onion)*

Tuna (6 oz.)

I used half a package of the frozen Tuna from our local Mega-Mart

Black sesame seeds (3 tablespoons)*

White sesame seeds (1 tablespoons)*

Fresh cracked black pepper (1 tablespoons)

Green onions (6)*

Alfalfa/radish sprouts (1/4 cup)*

Cooking oil

*Optional

Preparation

Prep

If tuna is frozen, thaw (place wrapped frozen tuna in running water for 10 minutes). Peel daikon into a long paper thin sheet (sheet paring). Fold daikon sheet up and cut into fine shreds (if using white onion just slice into thin strips). Slice green onions. Rinse sprouts. Cut tuna into square or rectangle strips.

Steps

  1. Mix sesame seeds and black pepper on a plate. Roll tuna in mix making sure to press in and cover the tuna with mixture.

  2. Heat a pan to medium high heat. Add a little oil and pan sear tuna for 15-30 seconds on each side.

  3. Wrap seared tuna in foil or plastic warp and put in freezer or ice bath for 10 minutes to help stop the cooking process.

  4. Thinly slice Tuna at a slight angle and fan across plate.

  5. Garnish with daikon, sprouts and green onion. Pour Ponzu sauce over Tuna.
