Ingredients
2 sticks unsalted butter
2 tablespoons grated dessicated unsweetened coconut
3 teaspoons unsweetened coconut milk 2/3 cup confectioners sugar, sifted
2 cups all purpose flour, sifted
1/2 teaspoon salt
Preparation
Preheat oven to 350°F.
Cream butter in a food processor.
Add the coconut and coconut milk and blend well.
Pour in the sugar, flour and salt.
Process until a dough forms.
Remove dough from mixer, place on a lightly floured surface and knead a few times.
Roll out to 1/4 inch thick and cut out shapes.
Place dough shapes on a cookie sheet covered with parchment.
Chill for 10 minutes.
Bake for 20 minutes or until edges turn golden.
