Ingredients
Corn tortillas
2 chicken breasts
2 tbsb olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
bunch of fresh cilantro, chopped
2 medium tomatoes, chopped
1 thick slice of onion, chopped
1 mild pepper, diced
1 can refried beans
1 lime cut into wedges
Preparation
- Combine chopped tomatoes, onions, and diced peppers in a bowl and set aside. 2.Microwave the chicken breasts until almost completely cooked. Shred the chicken with a fork. Cook in olive oil with paprika, garlic powder, onion powder, and chili powder. Until fully cooked.
- Spread about a tablespoon of refried beans on each tortilla and top with chicken. Microwave 20 seconds.
- Top with tomato mixture and chopped cilantro. Garnish with lime wedge.
