Ingredients
1 - small jar Balsamic vinagrette salad dressing (I used Paul Newman’s)
1 - small box of Orzo pasta 1 - bunch of scallions (chopped 1/4" pieces/bite size)
2 - cucumbers - chopped
1 small package grape tomatos sliced in half
2 cups fresh baby spinach - chopped
1/2 cup canned, sliced black olives
1/2 cup - pine nuts - toasted
½ cup feta cheese
1 cup sauted combined red, green, an yellow peppers
Optional add-ins:
1 cup cooked diced chicken
1 cup fresh or canned mushrooms
Preparation
Cook Orzo pasta about 10 minutes or to al dente. Drain.
Place orzo in a large serving bowl and cool with 1/4 of the bottle of salad dressing.
In one T. of olive oil, saute peppers for 5 minutes. oil. Add to in pasta.
Add the rest of the ingredients and chill.
